There's a restaurant in my neighborhood that serves "Healthy Desserts." One of the items on their menu is mango with black rice pudding. I'm not sure what's so healthy about it, but I do know that it tastes really good.
So when Dean's sister sent us a whole variety of different rices from Indian Harvest for Christmas, I was ready to do some experimenting. Especially when I saw their recipe for dessert rice on one of the packages. Instead of using black rice as the recipe calls for, I tried this with red rice. If you don't have black or red rice, I'm sure you could make this with regular white rice (but not Uncle Ben's). But don't forget the mango.MANGO WITH RED RICE PUDDING
2 cups water
8 oz Colusari red rice
1/3 cup brown sugar
1 cup coconut milk
1 mango, peeled and diced into 1/2 inch cubes
1) In medium-sized pot, bring water to a boil.
2) Add rice, cover. and reduce heat to medium. Simmer for 25 minutes.
3) Stir in brown sugar and coconut milk. Simmer for 5 more minutes.
4) Spoon into small bowls and top with mango.
Makes 4 servings.
