Mango with Red Rice Pudding


There's a restaurant in my neighborhood that serves "Healthy Desserts." One of the items on their menu is mango with black rice pudding. I'm not sure what's so healthy about it, but I do know that it tastes really good.

So when Dean's sister sent us a whole variety of different rices from Indian Harvest for Christmas, I was ready to do some experimenting. Especially when I saw their recipe for dessert rice on one of the packages. Instead of using black rice as the recipe calls for, I tried this with red rice. If you don't have black or red rice, I'm sure you could make this with regular white rice (but not Uncle Ben's). But don't forget the mango.

MANGO WITH RED RICE PUDDING

2 cups water
8 oz Colusari red rice
1/3 cup brown sugar
1 cup coconut milk
1 mango, peeled and diced into 1/2 inch cubes

1) In medium-sized pot, bring water to a boil.

2) Add rice, cover. and reduce heat to medium. Simmer for 25 minutes.

3) Stir in brown sugar and coconut milk. Simmer for 5 more minutes.

4) Spoon into small bowls and top with mango.

Makes 4 servings.

Oooh - my usual beef with rice pudding is that the grains dissolve and I feel like I'm eating slimy mush, but using black rice would retain some chewiness! Thanks for the great idea/recipe!

Ellie - When I first read your comment, I thought "beef with rice pudding"??? Must be an Australian dish. The red /black rice definitely adds to the chew factor.

Paz - I'd never heard of it either. But it's nice and nutty. And COLORFUL! Thanks for the feedback on the banner! It's been getting mixed reviews (mainly from Dean) so it may be changing soon.

So I've never had rice pudding. But lately I've been craving it. How is that possible?

Funny thing is, I just happened to notice red rice in the "ethnic" aisle of the local mega mart and wondered what I could do with it..

Guess I need to stop wondering and craving and do something about it, eh?

Ohhh and I love the new look of the blog and the new pic of the sous chefs! =)
