Robin's Baked Sweet Potato Fries

My friend Robin in DC recently sent me this little gem. I've known Robin for several years via work. Her organization and mine are part of the same national network. So, we were always assured of speaking with each other on monthly conference calls, and we got to see each other at least 2 or 3 times a year on the conference circuit. Alas, Robin is moving on to new career opportunities, but I am sure that she and I will stay in touch.

I was so excited when Robin sent me this recipe. I love sweet potato fries. Agnes & Muriel's in Atlanta really knows how to make them the way I like them.

Robin's recipe is from a cooking class that a nutritionist gave at her church. It's so simple. Just 4 ingredients and 5 steps. And baking the fries makes them healthier than deep-frying them while not compromising too much on the taste.

ROBIN'S BAKED SWEET POTATO FRIES

4 sweet potatoes
1/4 cup olive oil
nonstick cooking spray
salt to taste

1) Preheat oven to 400 degrees.

2) Cut the sweet potatoes lengthwise into 1/2 inch thick strips. Toss with the olive oil.

3) Coat a large cookie sheet with the nonstick cooking spray. Arrange potatoes in a single layer.

4) Bake the potatoes for 15-20 minutes or until golden brown on the bottom.

5) Sprinkle with salt and serve.

Makes 4 to 6 servings.

Ooo! My mom has always made fried sweet potato chips (for as long as I can remember) but this sounds like a much better (and healthier) way of doing things!

Say, those sound great! Since we are so close to DC now, maybe Robin would like to make us a batch, you know, as a welcome to the East coast thing! :p

There's something missing from this post though....but I can't quite put my paws on it...what could it *woof* be? Hee hee...

I love sweet potato fries! Let's just say that if I saw you alone in an alley with a basket full of those--I wouldn't hesitate to beat you silly and run off with them!

Okay, I'm not a violent guy. Maybe I'd just tap you on the shoulder from behind and then grab em when you looked the other way.

I just started eating more sweet potatoes. There's a barbecue restaurant nearby that serves sweet potato fries with POWDERED SUGAR on them. Yuck. I always ask them to hold the powdered sugar. This recipe looks easy and yummy!

Cyndi - Powdered sugar??? Really? I've never thought of making these sweet. I've only ever had them savory (with salt).

I went to a restaurant in Baton Rouge that made sweet potato chips with powered sugar they were so good. But everytime i look for a recipe i see them being made with salt.

Anonymous - Powdered sugar covered sweet potatoes sound delicious. I'm gonna have to experiment with that one.

melt marshmallow and dizzle over the sweet potato fries and sprinkle a little brown sugar over them its DELICIOUS !
