When I was a boy scout, we used to go camping every month. It was on these camping trips that I really began to learn about how to cook. We ate really well on our camping trips. Our meals consisted of much more than the usual hot dogs and hamburgers. One of the most extravagant meals I remember featured cornish game hens roasted inside of honeydew melons. Some of my most favorite memories from my scouting days involve sitting around the campfire while eating warm peach cobbler. We used to make the cobbler in dutch ovens covered with hot coals, but you can easily make them in a casserole dish in the oven. You won't believe how good this cobbler tastes. And it only consists of 4 ingredients.
SUPER EASY PEACH COBBLER
2 cans (15 oz) of peaches, drained
1 teaspoon cinnamon
1/2 box of yellow cake mix
1/2 stick of butter
Vanilla ice cream (optional)
1) Preheat oven to 350 degrees.
2) Butter the bottom and sides of a casserole dish or pie pan. Place the remaining butter in microwave safe bowl and nuke it until it's melted.
3) Spread the peaches across the bottom of the buttered casserole dish.
4) Sprinkle cinnamon over the peaches.
5) Sprinkle the cake mix across the peaches. Break up any large clumps, BUT DO NOT STIR THE CAKE MIX INTO THE PEACHES.
6) Drizzle the melted butter across the cake mix.
7) Bake for 30 minutes or until top is golden brown.
Serve with vanilla ice cream if you like. (I like.)
Ed's Note: In step 5, it's very important that you do not stir the cake mix into the peaches or else you'll end up with soggy peach cobbler. (And who likes that?) Just pour the cake mix (straight out of the box) on top of the peaches. It will turn into a nice, crumbly crust.
